Canada Day at Mt. Seymour Park








Everybody is celebrating today in Canada because July. 1st is CANADA DAY!!







Mom says even though I was born in the US, I am technically a "Canadian Born American" since I've lived in Canada ever since I was 8 weeks old. I listened to mom and showed my patriotism by wearing a red and white maple leaf bandanna all day.











The temperature in Vancouver was well over 30° C in the afternoon. Just as I was about to turn into an "Aire-Jerky", mom told me we were going to go to North Vancouver's Mt. Seymour Park for me to play in the river. So off we went!
















The emerald green Seymour River and its surroundings were so beautiful to look at. The water at Seymour is always very nice and clean so mom loves to take me there during the summer months. It gets a little cold during the winter and spring because of all the snow on Seymour Mountain. Today, however, the water temperature was just right for my boiling body. I couldn't wait to get into the water and start digging for rocks!!

In the evening, I went with mom and her friends to Ambleside Beach in West Vancouver to watch the fireworks. At first, I wasn't too keen about the BOOM BOOM BOOMs that came after the sky was alight with colours. Mom brought a huge supply of her homemade "Turkey Parme Biscotties". As soon as a BOOM went off, mom would stick a big piece of Turkey Parme Biscotti in my mouth. Now, you really have to try this stuff, it is just the most delicious, irresistable thing in the world!!! After a few mouths fulls of TPBs, I started looking at mom for more whenever I heard a BOOM. Needless to say, all my fear were GONE!!

***Mom's recipe for Turkey Parme Biscotti


1 lb of minced turkey meat

1 cup of quick oats

2 large eggs

1 tbs of minced garlic (can add more if preferred)

1 cup of Parmesan cheese

2 tbs of oil of your choice (mom uses Avocado oil just because that's what we have at home)

0.5 cup of water


In a blender, blend turkey and eggs until as smooth as possible. Pour into a large mixing bowl, add in the rest of the ingredients and mix well. Spread batter on a cookie sheet (well greased with vegetable oil) or in the bottom of a 9 X 12 pan about 1/3 inch thick. Bake at 350 F until no longer wet looking inside. Approximately about 45 minutes for one pan (varies from oven to oven). When cool cut into pieces. Keep refrigerated or freezer.
